This week we had the opportunity to work with our French Chefs Loic and Didier in the kitchen. Our school is putting on three Gala Dinners this week to showcase the talents of us students and also the courses that our chefs prepared.
The dinner menu for Thursday included: A trio of appetizers that included a bbq pork foam, tomato tiramisu, and a potato, bacon veloute, a play on a shrimp spring roll, mussels and scallop with a white wine sauce, a pear brandy sorbet for an intermezzo, beef rossini with foie gras and truffle, breaded Fourme d' Ambert with pear chutney, creme brûlée, and a lemon cake with raspberry sorbet.
I was able to work on the Beef Rossini with Foie Gras and Truffle*. I got to work with my awesome partner in crime Kylie. For most of the day, Kylie and I helped others with their dishes because we had to wait until the last minute to cook off our beef and foie gras. We started by helping roll 130 balls of Maytag Bleu Cheese. We then scooped 260 portions of raspberry sorbet. In between those two things, we helped out with other small tasks. Finally when 7pm came, we were able to season and sear our meat. It was one of the most exciting moments of the day! We then plated all of the elements onto the plate, and the feeling was amazing. To see all of the hard work finally come together, is something that every chef longs for.
