Nothing is better than going to the Apple Orchard picking apples and then using them to make a homemade Apple Pie!
First off we have our ingredients! For the Pie Crust, I used Apple Cider Vinegar, AP Flour, Shortening, Water, Salt, and Eggs. And then for the filling I used Lime Juice (recipe called for Lemon, but I didn't have any so I improvised), Apple Cider, Cornstarch, Sugar, Mutsu Apples from my local Orchard, Cinnamon, Nutmeg, and Cardamom.
After I gathered up all my ingredients, I start with my crust. Mix together the flour and salt, then using a pastry blender, blend in the shortening. Then add in your water, eggs, and apple cider vinegar. Let sit for a minute to absorb then use your hands to finish mixing. Separate dough into two halves, then wrap and put in the fridge for at least an hour.
And while you dough is resting up in the fridge, You can start on your filling! The first thing you're going to do is starting peeling, coring, and thinly slicing your apples. PRO TIP: have a bowl of cold water mixed with about 2 T Lemon Juice next to you while you're cutting your apples. Place the apples into the bowl after cutting them to prevent browning. Then once they are all cut, place them in a microwavable bowl, and microwave for 1-2 minutes. Then in a heavy saucepan mix together, sugar, spices, and cornstarch. Then add your lemon juice and apple cider. Cook that at medium heat until it starts simmering, then add in your apples and cook for 1 more minute.
After the dough finished resting, roll it out and fill the bottom of the pie pan. Then fill it with your delicious apple mixture. For the top of the pie, it's really up to you! For this specific pie, I decided to cut out small apples to cover the top of the pie. Then I baked it at 400 F for 20 min then lowered the temp to 350 F for 30-40 more min. Then enjoy the smell of your pie baking! (:

And it's decided... SHE LOVED IT!
